Banana Muffins (GF)

I was on a hike with the kids and as we were walking past my neighbor’s house we see her from afar and say hello. She tells us she’s making banana bread. That immediately sounds delicious to me and apparently to my son Wyatt as well who goes on and on about it the rest of the walk. “Mom, you haven’t made your banana muffins in so long!” So it’s decided then, I will make them. If I could only remember what I did last time. Hmmm. Ok so this time I promised myself I would make a recipe and post it. This way it least I can refer back to it next time! 😉

Ingredients:

  • 2 ripe bananas
  • 5 eggs
  • 1/2 cup melted butter (or sub with coconut oil)
  • 1 tablespoon vanilla extract
  • 2 tablespoons of almond milk
  • 3/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup sugar (optional)

Directions:

  • Preheat oven to 350
  • Beat the eggs
  • Mash the bananas and add to eggs
  • Mix in the rest of the wet ingredients
  • Mix in the dry ingredients
  • Bake for 30-35 minutes
