Almond Chocolate Chip Cookies (gluten free)

I finally figured out my favorite way to make gluten free chocolate chip cookies that are perfect for that occasional sweet treat but are not an overload of sweet (like buying a gluten free cookie from the store/bakery).

When it comes to chocolate chip cookies, many of the recipes out there either have tons of sugar (traditional recipes) in them or none at all (health blog recipes). Since I am not eating cookies all the time, just on a special occasion I wanted them to feel like an actual cookie but not quite as crazy as a traditional cookie, so that’s why I invented this recipe. It only has 1/4 cup sugar in the entire batch.

I called them Almond Chocolate Chips since they do have a bit of almond flavor from the almond flour.

Ingredients:

  • 3 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup melted butter
  • 1/4 cup coconut oil
  • 1/4 cup sugar
  • 2 teaspoons vanilla extract
  • 1 1/4 cup chocolate chips 

Directions:

  • Preheat oven to 350
  • Beat eggs
  • Mix in the rest of the wet ingredients
  • Add in the dry ingredients
  • Stir well
  • Bake for 12-15 minutes
